Schoenfeld, who was recruited with pick No.34 in the 2015 AFL Draft, has played eight matches so far.
Endurance is one of his assets, as he holds the Draft Combine record for the 3km time trial with a time of 9.15.
He says he's looking forward to the new campaign, which will be Dew's first in charge.
"I know I had some work to do building my body for the rigours of the game, I've worked hard with our high performance team and development coaches to achieve this," added the former Peel Thunder player. "I'm incredibly grateful to the club for extending my contract and that now allows me to focus on my football over the next year or so."
Joyce, who is a graduate of Gold Coast's academy, has played 28 games in two seasons after being taken with pick No.67 in the 2016 AFL Rookie Draft.
He said: "As a Gold Coaster to be in the position to play for your home town club is very special, and I'm looking forward to what we can achieve over the next few years."
The 20-year-old reveals Dew has already made his impact since being appointed.
"A new coach brings new beginnings, and so far Stuey has been fantastic. The feeling around the club has really lifted and I know we are all looking forward to playing under him," he added.
Gold Coast are 250/1 to win the 2018 Grand Final.
The Suns are 9/1 to finish in the top eight.
